Question:

To All CABMA Members,

At Marist (Div. I AA, 4,000 enrollment) we have a long-standing relationship with a local vendor who provides concession services for football games, men's and women's basketball games and select special events involving athletics. We are currently evaluating our present arrangement which is 15% of gross sales and would like to know what others schools are doing in regards to their concessions.

Could you please provide me with any information pertaining to your specific concession arrangement. Is your contract percentage based and if so, is it based on gross sales, attendance, etc.? Do you use an institutional vendor as part of a dining services/catering contract or and outside vendor for concessions?

Any additional information would be greatly appreciated as well.

At UW-Green Bay we have a local church group that provides concession services for our women's basketball games. We pay them a flat fee of $125 per game and require them to have a minimum of 6 people to work the stand. It has been difficult over the years to not only find a service group that is interested in providing service for 15 - 17 games, but also to find a group that is dependable and supply the number of people we desire. Therefore, we felt the best way to find and hold on to a dependable service group was to "guarantee" an amount per game. The flat fee was based on prior years gross sales and essentially works out to be approximately 10% of total gross sales for the year.

We do not use the campus dining service for our concessions. The items we sell at our stand are limited to soda, water, popcorn, candy, cookies and hotdogs. Therefore, an individual within the athletic department handles the ordering and oversight of the concession operations.

We use an on-post concessionaire and catering service. The payment schedule to the athletic department is as follows:

Football - $.80 per ticket sold or 20% of gross concession sales whichever is greater.

Any athletic event at sport complex (Basketball,Hockey,Gymnastics,Wrestling,etc) - $.75 per ticket (paid attendance)

All other concession operations in support of athletic events is 20% of gross concession sales.
